Zucchini
Planted around the first of May, and again in midsummer for a second crop.
Available early June to July, again in September until the first frost in the fall.
TIPS:
Zucchini needs to be refrigerated.
GREAT on the grill with a little olive oil, garlic, and sea salt: try both the yellow and green varieties together for a more colourful meal.
Nutritional Information:
Low in Saturated Fat, and very low in Cholesterol and Sodium.
It is also a good source of Thiamin, Niacin and Pantothenic Acid, and a very good source of Dietary Fiber, Protein, Vitamin A, Vitamin C, Vitamin B6, Folate, Iron, Magnesium, Phosphorus, Potassium,
Zinc, Copper and Manganese.
